Healthy Magical Unicorn Porridge (Yep, I Went There)

I’m not sure where this whole unicorn trend came from, but I definitely loving it!!

Whether it’s lattes, noodles, toast, or who knows what else, UNICORNS ARE IN!

I most admit that I’ve been so busy over on Instagram @itsmeladyg, documenting my plant based journey on a daily basis (go ahead and follow me for daily healthy shenanigans), I’ve been majorly slacking on posting my recipes over here on the blog.

So, I knew I had to come up with a REALLY good one to make up for it. And what’s better than a magically delicious HEALTHY Unicorn themed dish.

Blame it on my overly ambitious nature, but I’ve been obsessed with finding new ways to put more veggies in already healthy dishes. And after watching my favorite fact based nutritional superstar of a doctor, Michael Greger’s video entitled Superfood Bargains I’ve been experimenting with red/purple cabbage in all sorts of unlikely combinations.

I know you’re probably thinking…

WHAT’S SO SPECIAL ABOUT PURPLE CABBAGE? 

Purple cabbages, (or red cabbage whichever you rather call it), are from the cruciferous family. This means they are family members of regular cabbage, cauliflower, kale, bok choy, and broccoli. Most cruciferous vegetables have been proven to have a preventive effect on an array of cancers. According to this scientific study and review, it was found that “results clearly point toward a positive correlation between cancer prevention of many target organs and consumption of cruciferous vegetable or their active constituents.”

So, why wouldn’t we want to start incorporating more into our diets?!

In addition, Dr. Greger mentions in his video mentioned above, purple cabbages are readily available in most if not all grocery stores, affordable, and last for an extraordinary long time in your fridge. This on top of the fact that it’s jam packed with antioxidants is amazing.

And for the ladies, I mentioned in my post and video titled 5 Natural & Inexpensive Things I Did To Get My Period Back , I explained how cruciferous vegetables have been shown to help balance hormones by helping to process out excessive estrogen from our system. However, if you have issues with your thyroid, you may want to avoid eating too much raw cabbage and as always CHECK WITH YOUR DOCTOR BEFORE DOING ANYTHING NEW. 

But what does purple cabbage have to do with Unicorns?

Well, in order to explain this, I need to tell you a very short story.

A couple of months ago, my son and I cracked open a brand new science experiment toy that he received last year. This kit included all of the supplies necessary to conduct a couple of experiments in your own house.

One of them included some dried purple cabbage and required you to add it to a couple cups of water and do a series of steps to understand the reactions of acids and bases. In one of the cups we had to add several drops of an acid, (vinegar or lemon juice), and observe the color changes. Low and behold, the cup of purple water turned pink!

Fast forward to earlier this week while I was scrolling through Instagram taking note of all the unicorn EVERYTHING and, (Lightbulb moment), I decided to put what I learned all those months ago to work.

And VOILA!! Unicorn Porridge!! It’s a fun way to get a quick serving of veggies in an already healthy breakfast. Red cabbage is quite mild and you can hardly taste it in the oatmeal. With the cinnamon and sweetener, I almost forgot it was even in there… well until I looked down at the bowl 🙂

So, let’s get you started making your own.

 

HEALTHY MAGICAL UNICORN PORRIDGE

For this recipe, I started with some leftover oatmeal that I made for my son one morning. I usually have some hanging around in the fridge because we eat it so much. Like my I mentioned in my Cream of Quinoa recipe, I often make a big batch sometime in the week and leave it in the fridge to reheat. So, that is where I will start this recipe from.

1 Cup Cooked Oatmeal (I used rolled oats)

3/4 Cup Raw Purple Cabbage Diced (Use more for a deeper color)

1 and 1/2 Cup Almond Milk

Spices and Sweetener to taste (I use Cinnamon, Vanilla Extract, and 2 tsp Cane sugar)

A couple drops of lime of lemon juice

 

  1. Cook the oatmeal as directed.
  2. Take the cabbage, oatmeal, milk, and spices and throw in a blender or mixer.
  3. Pulse or mix for a 30-45 seconds until you see the porridge turn purple.
  4. If the porridge is still warm, put the porridge straight into a bowl. If not, warm the mixture in a pan over the stove then place in a bowl.
  5. Take the lemon or lime and gently squeeze the juice in the areas that you would like to turn pink.
  6. The longer you leave the drops on the porridge, the deeper the pink will turn.
  7. You’re done!! Super easy!!
